Aloo Gobi Masala is one such dish which is also served in banquets on special occasions like weddings, birthdays and other celebrations. I have prepared and served this Aloo Gobi Masala recipe for my kid’s birthday parties many times and each time I have received lots of compliments for this delicious recipe.

About Aloo & Gobi – Vegetable

Aloo (Potato) – Aloo is a round or oval shaped vegetable that grows underground and its color is white with light brown, red or pink skin. There are many different varieties of potatoes available in the market. This vegetable is easily available in the market throughout the year. Potato is very much liked all over the world and many types of delicious dishes are made from this vegetable. Potatoes are also used to make chips which are eaten as a dry snack all over the world and is a favorite dry snack.

Gobi (Cauliflower) – Gobi is one of the most favorite and common vegetables of the winter season, but this vegetable is easily available in the market throughout the year. This vegetable belongs to the Brassicaceae family which mainly includes vegetables like kale, cabbage and broccoli. It comes in the category of a healthy vegetable. Many delicious food dishes are made from cauliflower.

What is Aloo Gobi Masala?

If I talk about delicious dishes, Aloo Gobi Masala is one of my and my kids favorite dish. It is a tangy and spicy dish prepared with potatoes and cauliflower along with tomatoes, green chilies, ginger, fresh coriander leaves. Garam masala, coriander powder and dried mango spices are specially used to make it tasty.

Aloo Gobi Masala is best served with roti, paratha and poori. Many people also like to eat curd with it, in which curd with bondi is mainly eaten, which enhances the taste of this dish even more.

How to make Aloo Gobi Masala

 Ingredients 

  • Potato – Chopped, 2 Medium size
  • Cauliflower – Chopped,1 Medium size
  • Tomato – Chopped, 2 Medium size
  • Ginger – Chopped, 1 Small size
  • Turmeric Powder – 1/2 tbsp
  • Garam Masala Powder – 1/2 tbsp
  • Coriander Powder (Dhaniya)- 1 tbsp
  • Dry Mango Powder (Amchur) – 1/2 tbsp
  • Red Chilli Powder – 1/4 tbsp or as per taste
  • Cumin Seeds – 1/2 tbsp
  • Oil – 3-4 tbsp

For Garnishing 

  • Fresh Cilantro (Coriander Leaves) – Chopped, 1/2 small cup

How to make Aloo Gobi Masala – Step by Step

1. To make Aloo Gobi Masala, put two spoons of oil in a deep frying pan. Heat oil on medium heat. When the oil is hot, add gobi (cauliflower) florets and fry for 2 to 3 minutes.

2. Now put the chopped potatoes in the frying pan and stir with a frying spoon, mix the cauliflower potato pieces and fry on a low flame.

3. Fry the cabbage and potato pieces for 8 to 10 minutes till they turn light golden.

4. Take out the fried potato and cauliflower pieces on a tissue paper.

5. Now put 1 teaspoon oil in the same frying pan and heat it on low flame. Add 1/2 teaspoon cumin and a pinch of asafoetida to the hot oil.

6. When cumin starts crackling, add chopped ginger pieces to it.

7. Add 1/2 tsp turmeric, 1/2 tsp coriander powder and 1/4 tsp red chili powder.

8. Mix all the spices by stirring with a frying spoon.

9. Add chopped tomatoes to the frying pan.

10. Add 1/2 teaspoon salt (you can add salt as per your taste) and stir with a frying spoon to mix the tomatoes with the roasted spices.

11. Leave the frying pan covered for 1 minute. By this process, the tomatoes will become soft and the roasted spices will mix in the tomatoes.

.12. Add 1 to 2 chopped green chilies to the roasted tomatoes to make the Aloo Gobi Masala recipe a little spicy. You can take the quantity of green chilies as per your taste. If you do not eat spicy then do not use green chilies.

13. Put aloo gobi in the frying pan. Add 1/2 tsp salt to it (you can add salt as per your taste).

14. After adding salt, mix aloo gobi with tomato masala with a frying spoon.

15. Leave the frying pan covered for 10 to 12 minutes. Cook potatoes and cauliflower on low heat. Potatoes and cauliflower will be soft in 10 minutes. Check by removing the lid of the frying pan, if the potatoes and cauliflower are not fully cooked, then sprinkle 1 to 2 teaspoons of water in it as per requirement and leave it for 1 to 2 minutes by covering the lid of the frying pan. By sprinkling water, potatoes and cauliflower will be well cooked.

16. Remove the lid of the frying pan and check. If the potatoes and cauliflower have become nicely soft and tender, then your delicious and spicy Aloo Gobi Masala recipe is ready.

17. Add 1/2 teaspoon dried mango powder. Aloo Gobi Masala gets a slight sourness from dry mango powder.

18. Now add 1/2 tsp garam masala powder. Garam masala powder is a mixture of different types of spices, the use of which enhances the taste of dishes and is also considered very good for health.

19. Mix the spices with Aloo Gobi Masala by stirring with a frying spoon.

20. Sprinkle chopped fresh coriander leaves on top and stir with a frying spoon to mix.

Special tips for Serving and Garnishing Recipe

Serve with Paratha or Poori – Serve Aloo Gobi Masala with roti or paratha. It can also be served with puri. Aloo Gobi masala goes very well with puri, it tastes great with hot puri.

Serve with Bondi Raita – You can also serve curd raita or plain curd with it. You can use bondi in it to make curd raita. Raita of Bondi is very tasty to eat and it also digests the food easily.

Garnish with Coriander Leaves – The use of freshly chopped coriander leaves makes Aloo Gobi Masala even tastier.

Important tips for tasty Aloo Gobi Masala

  • Frying tip – To make Aloo Gobi Masala tasty, both potato and cauliflower should be well cooked. While stirring potatoes and cauliflower, take special care that both potato and cauliflower become light golden, due to which a slight crispness comes, which makes Aloo Gobi Masala more delicious.
  • Do not use extra water – If we want to make Aloo Gobi Masala a little dry, then do not use extra water while making this recipe because there is a lot of water inside the cauliflower, using extra water makes it more wet. At the end, remove the lid of the frying pan and check that both the potato and cauliflower are cooked well and there is no moisture in them.
  • Use of Chopped Coriander Leaves – You can garnish the Aloo Gobi Masala with extra coriander leaves. Adding fresh chopped coriander leaves enhances its taste even more.
  • Use of Asafoetida – Asafoetida is used in food dishes. Its use improves digestion and helps in digestion of food. I have used a pinch of asafoetida in Aloo Gobi Masala. The aroma of asafoetida enhances the taste of this recipe and also helps in digestion.
  • Use of Green chilies – To make Aloo Gobi Masala spicy, green chilies are used in it. The use of green chilies gives it a pungency and enhances the taste. If you do not eat spicy then do not use green chilies. You can also keep the amount of green chili according to your taste.
