Ingredients for Chole Making in Pressure Cooker

  • Chickpeas soaked overnight – 1 ½ cups
  • Big cardamom – 1-2
  • Whole dry red chili – 1-2
  • Dry Amla – 4-5
  • salt to taste
  • Bay leaf – 1-2
  • Tea powder – 2 tbsp
  • Baking Soda – 1 tbsp
  • water – as needed

Ingredients for Chole Masala

  • Black peppercorns – 10-14
  • Big cardamom – 2-3
  • Mace – 2
  • Green cardamom – 2-3
  • Kasuri methi – ½ tbsp
  • Nutmeg – ½
  • Chakri Phool – 1
  • Cloves – 2-3
  • Fenugreek seeds – ¼ tsp
  • Coriander powder – 1 tbsp
  • Cinnamon – 1 stick
  • Digi red chili powder – ½ tbsp
  • Cumin powder – ½ tbsp
  • a pinch of asafetida

Ingredients for Fried Potatoes

  • Potatoes Boiled – 2
  • oil for frying
  • salt to taste
  • Digi red chili powder – ½ tbsp
  • Dry mango powder – 1 tbsp

Ingredients for Garnishing

  • One sliced ​​lemon slice
  • tomato slices
  • Green chili – 2
  • small onion – 1
  • green chutney ready
  • green coriander leaves
  • Ginger chopped – ½ inch

Ingredients for making Bhatura without Yeast (Khamir)

  • Maida – 1 ½ cup
  • Rawa soaked in water – 2 tbsp
  • Sugar – ½ tbsp
  • salt to taste – as required
  • Oil – ½ tbsp
  • water – as required
  • Curd – ¼ cup
  • Baking soda – ½ tbsp
  • Oil – 1 tbsp

  • Maida – 1½ tbsp
  • Sugar – ½ tbsp
  • East soaked in water – 5 grams
  • Oil – ½ tsp
  • salt to taste
  • water – as needed
  • Oil – 1 tbsp
  • Rawa soaked in water – 2 tbsp

 

How to make Chole in Pressure Cooker

In a pressure cooker, add over night soaked gram, dry amla, dry red chili, black cardamom, salt to taste, baking soda, bay leaf, tea powder and water as required. Cover and pressure cook for 5 whistles. If you do not have tea bags, you can make a decoction of tea and put it in the cooker. Open the cooker after the pressure is released and throw away the tea bags. Keep aside. Strain the chloe and keep the remaining water for later use.

Recipe for Chole Masala

Add black cardamom, black pepper, green cardamom, mace, kasoori methi in a bowl. Add cinnamon stick, nutmeg, star anise, cloves, fenugreek seeds. Add this to the pan and fry till the spices become fragrant. Add coriander powder, a pinch of asafoetida, degi red chili powder, cumin powder and fry well. Put it in a grinder jar and grind it finely. Keep it aside for further use.

For tempering Chickpeas

Heat ghee in a pan, add pressure cooked chickpeas, prepared chickpea masala, black tamarind water. Mix everything well so that the chickpeas do not break. Adjust the consistency by adding the remaining chickpea water. Simmer on low heat for 15-20 minutes, or till the chickpeas absorb all the flavours. Finally add ginger and ghee. Garnish with ginger, ghee, green chillies, fried potatoes, chopped onions and coriander sprigs. Serve hot with fried bhatura and green chutney.

Fried Potato for Chole Bhature Recipe

Fried potatoes are eaten with Chole Bhature in Old Delhi. Fried potatoes with spicy chickpeas make its taste more delicious. To make fried potatoes, heat oil in a frying pan, add asafoetida, mustard seeds, cumin seeds, green chilies to the hot oil and mix it with the spices, and then put the chopped potatoes in the frying pan and mix them with the spices. When the potato becomes slightly crispy, take it out in a bowl. Add a little chaat masala, black pepper, degi red chili on the fried potatoes and mix it well. Serve these fried ones with tempering chickpeas.

In North India, fried green chillies are eaten with Chole Bhature. To make fried green chillies, wash and clean 8 to 10 green chillies with water, keep it for 10 minutes to dry. After this, take a frying pan, put one tablespoon of desi ghee in it, let the ghee heat up. Add safoetida, mustard seeds or small mustard seeds, a little cumin in hot ghee, mix green chilies in it, fry a little in a frying pan. Serve fried green chillies with Chole Bhature. The taste of Chole Bhature becomes very spicy with green chillies.

For Bhatura Recipe without yeast

To make bhatura without yeast, mix all these ingredients well in a bowl with flour, sugar, oil, salt, curd, baking soda and semolina soaked in water for 1 hour.

  1. Add water as required and knead the dough.
  2. Do not apply much pressure while kneading the dough and knead smooth and soft dough without applying pressure. After this, grease the dough with oil and keep it covered in a utensil for 1 hour.
  3. After 1 hour, take out the dough from the utensil and make round balls. One thing has to be specially kept in mind that it should not crack while making the balls.
  4. To prevent the dough from sticking, put oil on it and keep it. Keep it covered for 15 to 20 minutes.
  5. To make Bhature, roll it into a round shape with the help of a rolling pin. While rolling it, keep in mind that it is neither too thin nor too thick so that the bhatura can be fried in the right shape.
  6. To fry Bhature, heat ghee in a large pan. When the oil becomes hot, fry the Bhature on low flame. To make the Bhature puff up, press it lightly with a ladle. When the bhatura starts to puff up, sprinkle hot oil on the bhatura until it puffs up completely. To fry the bhatura from both sides, turn the bhatura and fry it in oil so that the bhatura gets fried properly from both the sides.

In this way you can make very soft and puffy Bhature which are very tasty to eat. Serve fried bhatura with spicy spicy chickpeas, fried potatoes and chillies.
