Dum Aloo | Potato Dish

Potato is a vegetable which is used to prepare food dishes all over the world. In India too, many types of dishes are made from potatoes. Dum Aloo made from baby potatoes is one of everyone’s favorite dishes in my house.

My kids love to eat Dum Aloo with parathas. To make Dum Aloo curry, I use curd in it, which makes its gravy very soft and creamy, which is eaten with roti, paratha and rice.

This gravy dish is everyone’s favorite on the menu at many festivals, family functions and children’s birthday parties at my house.

Today I am going to show you my special recipe of restaurant-like delicious, soft and creamy Potato Dish called Dum Aloo which is very easy and you can easily make this recipe at home. To make this recipe, I have used some special types of spices, its use makes the Dum Aloo recipe even more delicious.

In North India, many types of gravy dishes are made from potatoes. Dum Aloo is a special and famous dish of Indian food which is cooked by mixing small sized boiled potatoes in spicy, soft and creamy curd gravy. This gravy dish is served with roti, paratha, rice, naan and wheat flour puri. This is a very tasty and spicy gravy dish.

What is Dum aloo 

Dum Aloo is a very tasty dish among the many types of curry dishes made from potatoes in Indian food. Boiled potatoes are used to make this gravy dish. Boiled potatoes are cooked mixed with spicy curd gravy.

To make this Indian curry dish, some special spices like turmeric powder, coriander powder, Kashmiri red chili, ground hot spices, Fenugreek Leaves dry etc. are used. The use of curd in Dum Aloo recipe is very special. Using curd makes the recipe very soft and creamy.

In North India, it is served with roti, paratha and rice but its real taste comes with hot puri. Whenever I make Dum Aloo at home, I make Poori with it. Today I will show you this delicious recipe of Dum Aloo by serving it with hot poori.

How to make Dum Aloo

Ingredients

  • Potato – 10-12 small Potatoes
  • Tomato – 4 Medium size
  • Ginger – 1 small piece
  • Green Chilly – 2 Medium size
  • Cashew Nuts – 25-30 nuts
  • Whole Kashmiri Dry Red Chilly – 2 medium size
  • Thick Fresh Curd – 1 cup
  • Turmeric Powder – 1 table spoon
  • Coriander Powder – 1 table spoon
  • Ground Hot Spices – 1 table spoon
  • Red Chili Powder – ¼ table spoon (you can add salt as per your taste)
  • Fenugreek Leaves dry – ½ table spoon
  • Whole Cumin seeds – ½ table spoon
  • Asafetida – ¼ table spoon
  • Salt – 1 table spoon (you can add salt as per your taste)

Important Preparations before cooking

  • Keep 2 large Kashmiri whole chilies and 20 to 25 cashew nuts in a small bowl to soak in water.
  • After soaking for 10 minutes, grind whole chilies and cashew nuts in a mixer grinder and make a paste. This paste is to be used to make gravy for Dum Aloo by adding it to tomato paste.
  • Make a paste by grinding 4 medium size tomatoes, 1 small piece of ginger and 2 green chilies in a mixer grinder. It is to be used to make tomato gravy dish.

Direction Step by Step 

1. To make Dum Aloo, first boil small sized potatoes in the cooker for 3 to 4 whistles.

2.Take out the boiled potatoes in a strainer. After this, peel off the peel of the potato and make a hole in it with the help of a fork so that the gravy masala reaches inside the potato.

3.Heat one tablespoon oil in a frying pan. Fry the boiled potatoes in hot oil until they become light golden. Take out the fried potatoes and keep them aside.

4. Marinate Fried Potatoes with curd

  • Take 1 cup curd in a big bowl. Add ½ teaspoon turmeric powder, ½ teaspoon coriander powder, ½ teaspoon Kasoori methi, ½ teaspoon garam masala, ½ teaspoon salt to the curd.
  • Blend the curd well with the help of a blender so that all the spices mix well with the curd and the texture of the curd becomes absolutely soft and creamy.
  • To marinate fried potatoes, add the potatoes to the blended curd so that the potatoes mix well with the curd mixture.

5.Heat one teaspoon oil in a frying pan, in hot oil, add ¼ teaspoon of Asafetida, ¼ teaspoon of black peppercorns, 2 bay leaves, 2 cloves, 2 small sticks of cinnamon, 2 small sticks of cardamom and fry the spices lightly by stirring with a fry stick.

6.Now after this, add 4 tomatoes and 2 green chilly paste in the fry pan. Fry the tomato paste by stirring it with a fry stick.

7.When the tomato paste is roasted, add the paste made of Kashmiri whole red chilies and cashew nuts soaked in water and mix it with the roasted tomato gravy.

8.Add ½ teaspoon turmeric, ½ teaspoon ground hot spices, ½ teaspoon whole cumin, ¼ chili powder, ½ teaspoon coriander powder and ½ teaspoon salt to the tomato gravy.

Note: You can keep the quantity of salt and red chili as per your taste.

Mix all the spices with tomato gravy.

Stir with a fry stick and fry for 1 to 2 minutes.

9.Add potatoes marinated in curd to roasted tomato gravy and mix well.

10.To dilute the texture of gravy, add ½ glass of water and mix well.

11.Place the lid of the fry pan and keep it covered for 1-2 minutes.

12.Remove the lid of the fry pan and stir with a fry stick and cook for 1 minute.

Serving Tips

Serve with hot puri – In North India, Dum Aloo curry is served with roti, naan, you can also serve it with Steamed Rice . I make aloo Aloo Gobi Masala and wheat flour hot poori with Dum Aloo. It tastes very yammy with wheat flour hot poori.

Special Tips for Delicious Soft and Creamy Dum Aloo

Use thick curd – To make more soft and creamy gravy, use thick curd in recipe.

Make holes in boiled potatoes – In this potato’s recipe small sized boiled potatoes are used. Make a hole in the potato with the help of a fork so that the gravy masala can penetrate inside.

Fry the boiled potatoes till light golden – Fry the boiled potatoes till light golden in a frying pan prime pan. Frying gives a slight crispness to the potatoes, which gives a very good texture to the recipe.

Leave the fried potatoes to marinate in the spiced blended curd for 10 minutes – Put the fried potatoes in the spiced blended curd and leave to marinate for 10 minutes so that the curd mixes well with the potatoes.

Use Fenugreek Leaves dry- To make recipe tasty, use Fenugreek Leaves dry along with other spices before blending the curd. Use of Fenugreek Leaves dry enhances the taste of the gravy.

Add chopped coriander to make dish more delicious – Fresh coriander is a staple ingredient in every Indian recipe. Freshly chopped coriander makes the Dum Aloo recipe even more flavorful.

Ingredients for tomato gravy paste making

  • 4 Medium size Tomato
  • 1 Small Ginger slice
  • 2 Medium size Green chili

Ingredients for Cashew Nuts Paste for gravy

  • 25-30 Whole Cashew Nuts

    10. To dilute the texture of gravy, add ½ glass of water and mix well.
    11. Place the lid of the fry pan and keep it covered for 1-2minutes.
    12. Remove the lid of the fry pan and stir with a fry stick and cook for 1 minute.
