Rajma curry is a special dish eaten in the food plate in the North Indian states of Jammu Kashmir, Delhi, Punjab. Rajma Chawal is one of the most prepared curry dish for Sunday afternoon lunch here.

Rajma rice is also a very famous street food in Delhi and Punjab, which is also served in restaurants. Rajma masala curry and rice is a must-have in my house on weekends as it is my kids favorite food.

Rajma masala is an Indian curry dish eaten around the world. It is made from red kidney beans or white kidney beans (there are many varieties of kidney beans) soaked overnight and boiled in a pressure cooker. 

Then boiled rajma is cooked with tomatoes, ginger, green chilies and spices like garam masala, dry coriander powder, red chili powder, dried mango powder etc. Rajma curry is eaten with rice, roti and naan.

What is Rajma(Kidney Beans)?

Many varieties of kidney beans are available in India, out of which dark red and light colored white kidney beans are very popular. Some small sized varieties of Rajma are also available in the market. Kidney beans are called kidney beans because of their kidney-like shape.

Red to maroon, small sized kidney beans are found in the northern Indian state of Jammu and Kashmir. Rajma curry which is eaten with rice is a special dish here.

What is Rajma Masala?

Rajma Masala curry, one of the many delicious curry dishes eaten in the Indian plate, is a world famous curry dish made from kidney beans. Red or white kidney beans, curd, tomatoes, ginger, green chilies, fresh green coriander leaves and some special spices are used to make this.

This is a very famous curry dish in Indian homes, which is made in every household for lunch. Rajma masala curry is eaten with rice, roti and naan.

How to make Rajma Masala Recipe

To make this curry dish, white kidney beans or red colored kidney beans are soaked for 8 to 10 hours. First the kidney beans are boiled in a pressure cooker, after that tomato, ginger and green chili paste are fried and boiled kidney beans are added to it and cooked.
To make the gravy tastier, I also use curd in it, which makes the texture of the gravy better and also enhances its taste.

Ingredients

  • Rajma (Kidney Beans White) – 1 Cup
  • Tomato – Chopped 3 medium size
  • Ginger – 1 small piece
  • Green Chili – 2 medium size or as per taste
  • Curd – 1 small cup
  • Cumin Seeds – 1/2 tbsp
  • Turmeric Powder -1/2 tbsp
  • Hot Spices Mixture -1/2 tbsp
  • Dry Coriander Powder -1/2 tbsp
  • Red Chilly – 1/4 tbsp or as per taste
  • Dry mango Powder – 1/2 tbsp
  • Asafoetida – 1/2 tbsp
  • Salt – 1/2 tbsp or as per taste
  • oil – 1 tbsp

For Garnish

  • Fresh Green Coriander Leaves – Chopped 1/2 small cup

Use of Curd in Rajma Masala Recipe

Rajma curry is made in many ways but the method of making Rajma masala recipe with curd is a very special secret which I am sharing with you today.

I learned the use of curd in Rajma curry from my mother who cooks very tasty food. Try making Rajma curry with curd once, it will become your favorite curry dish.

The right way to add curd to tomato paste

  • First of all beat 1 small cup of curd well so that the curd becomes soft and creamy.
  • When the tomato paste is fried well in the frying pan on low flame, then turn off the gas.
  • Now add soft creamy curd to it. It is necessary to turn off the gas before adding curd, otherwise the curd will curdle. Mix the curd with the roasted tomato paste by stirring it with a flying spoon.

Directions Step by Step

1. Soak 1 cup kidney beans in 3 cup of water overnight. To soak kidney beans, 3 times the amount of water is required.

2. After soaking overnight for 8 to 9 hours, take out the kidney beans from the water and keep them separately in a vessel.

3. To boil Rajma in a pressure cooker, take 4 cups of water and add soaked Rajma to it. Add 1/2 teaspoon salt, Rajma melts easily with the use of salt.

4. Boil Rajma in a pressure cooker on high flame for 15 to 20 minutes.

5. To make a paste of chopped tomatoes, ginger and green chilies, put them in a mixer grinder.

6. Grind tomato, ginger and green chili in mixer grinder. To make good gravy, tomatoes have to be finely ground.

7. Let the pressure in the pressure cooker release naturally. Check the boiled rajma by pressing it with your finger, if the rajma is completely melted then it will break.

8. Heat one spoon oil in a frying pan. Add 1/2 teaspoon whole cumin seeds and 1/4 teaspoon afoetida in hot oil.

9. When the cumin starts crackling in the frying pan, add the ground tomato paste to it.

10. Stir and fry the tomato paste with a frying spoon for 3 to 5 minutes.

11. When the tomato paste leaves the oil and becomes thick after frying well, then add a cup of fresh curd to it.

13. Mix the tomato paste and curd well by stirring with a frying spoon.

14. Cook the gravy on low flame for 3 minutes.

15. Add 1/2 teaspoon garam masala and stir with a frying spoon to mix it with the gravy.

16. Add boiled kidney beans to the gravy.

17. Cover the frying pan with a lid and leave it to cook for 5 minutes.

18. Check the gravy by removing the lid of the frying pan. If the gravy is cooked well then turn off the gas. Rajma masala is ready. Sprinkle chopped coriander.

Important tips for delicious Rajma Masala Recipe

Amount of water for soaking Rajma – 3 times that of soaking 1 cup Rajma (3 three cups) water is to be taken.

Use of salt while boiling kidney beans – Add 1/2 teaspoon of salt while boiling the soaked kidney beans in the pressure cooker. Rajma melts easily with the use of salt.

Instructions
 

  • Soak 1 cup kidney beans in 3 cup of water overnight. To soak kidney beans, 3 times the amount of water is required.
